1.9g carbohydrate, 3.2g fibre
Wonderfully low in calories, and a good source of fibre, including the soluble variety that can help to lower blood cholesterol.
Also a source of potassium, which helps to prevent fluid retention and regulates blood pressure and heart beat.

Best served: Raw for maximum retention of nutrients. Depending on your weight loss plan, mix with grated apple, walnuts and a yoghurt-based dressing to make a healthy salad.

One peeled celeriac provides 3 servings
1 large celeriac (650g/1.5lb total weight)
Spray Oil or 1-2 tbsp groundnut or vegetable oil
1 tbsp mild curry,paprika or garlic powder


1. Peel the celeriac, slicing off the top and bottom and sweeping down the sides with a heavy, sharp knife to remove the tough skin. Cut the celeriac into thumb-thick slices and then into fat chips.

2. Bring a very large saucepan of salted water to the boil, throw in the chips and blanch (boil rapidly, uncovered, for 1-2 minutes). Drain the chips and throw back into the saucepan. Add spray oil (or nut/seed oil to promote healthy skin, hair and nails), curry powder and optional sea salt. Toss until well coated.

3. Spread the chips over a large heavy baking sheet, leaving plenty of space (you may need 2 sheets). They take 30-35 minutes to cook, so put them in the 230C/ gas 8/fan 210C oven.

Per serving: 81 kcalories, protein 2.0g, carbohydrate 4.0g, fat 6.0 g, saturated fat 1.0g, fibre 6.0g, salt 0.63 g
